Peppermint Sweets

My last tackle at the Hunger Games Unofficial Cookbook is this recipe for peppermint sweets AKA peppermint patties. 

A simple but time consuming process I started off with 3/4 cup of condensed milk mixed with 1 tsp vanilla extract and 2 tsp peppermint extract. I then  stirred in about 4 cups of confectioners sugar which formed a stiff dough-like mixture. (I continued to sprinkle in confectioners sugar along the way as well.) I scooped the mixture into little 1/2" balls which I then flattened out into small patties. Once I made all of the little patties I set them on a baking sheet with parchment paper and let them dry for an hour. After the hour was up I flipped them all over (sprinkled some more confectioners sugar on top of some of the sticky patties) and let them dry for another hour. I placed them in the freezer for about 15 minutes while I melted chocolate.

I did this next step in parts. I melted 1 cup of chocolate chips with 1/2 tsp of shortening at a time and dipped each patty into the chocolate. I ended up doing this in about 5 batches just to make sure the bowl of chocolate didn't harden too much in the process. I sprinkled some crushed peppermint candy on top and voila! Peppermint patties. I made a variety while I was at it and have white chocolate, milk chocolate, and dark chocolate peppermint patties and while it took quite some time, it was really fun to do and I enjoyed myself thoroughly.
